I feel like I got hit by a bus this last week. I don't remember the last time I slept enough. I might have not slept one night. I'm too old for this.

So now I will use sleepyti.me to figure out when to go to bed and just do it! Nike-style. What is that you ask? It's a shoe brand... What that's not what you meant?

Sleepyti.me tells you four different times you should be asleep by to wake up refreshed in the morning. You just tell it when you want to wake up.

Leftover Recipe



Today I have a simple breakfast recipe. Open-faced omelet.

olive oil
2 eggs
1/2 cup sliced mushrooms
a pinch of spinach
1-2 oz feta cheese
salt and pepper

In a medium sized hot frying pan with enough olive oil to cover the pan, crack two eggs and scrabble in pan. Cover eggs with mushrooms and spinach, salt and pepper to taste. Let cook on medium for a few minutes until oil begins to bubble at the edges of the eggs. Add feta cheese (I like sheep's milk feta). Let cook on low for a few seconds to warm cheese. Slide off pan onto plate and egg immediately.

This is based off of Luke's egg steaks. On weekends I tend to run out of cheerios and eat some sort of omelet. With less than two weeks to go before seeing Luke egg steak put a smile on my face. I think the taste of this one will do the same to you.

So I follow a lot of blogs. I eat a lot of food. I LOVE dessert. The following link is to a blog I "read" thinking the whole time thank god it's in French or I would be in big trouble. I could probably translate it on google, but the truth is I don't want to. Leftover Thought


Often I do things and think, geez-up why did I say that or do that? How embarrassing or uncouth?

Then I remember, I did it because that's me and I like me so anyone who doesn't like what I did, oh well. Unless it really hurt someone, I'm not apologizing for me and I'm not gonna worry, if someone doesn't like me.

So I promised you a recipe. I had the whole post written and hit the wrong button and now it is gone! I've been putting this one off because I wanted a picture of it. Alas part of learning to live happy is to learn to live imperfectly.

Stuff Acorn Squash:
(makes roughly 6 servings)

1 small acorn squash per two servings (as the farmer calls them microwave size)
1/2 cup lentils
1/2 cup rice
1 Tbsp butter
1 tsp coriander
1 slice cheese per serving

In water, butter and coriander, cook rice and lentils together.

As needed cut a acorn squash in half (see picture). Each half is one serving. Poke holes in the sides of the squashes you plan to eat immediately. Place prodded squash cut-side down on a microwave safe plate. Microwave on high for ten minutes. The squash should have mostly changed color by the end of the ten minutes as you are essentially steam/baking it.

Fill squash with rice/lentil mixture and cover with a slice of cheese. Microwave on high for another minute or two depending on how melty you like your cheese.

I suggest you serve either with a meat or salad of some sort. It can make a main dish too. (See veggie friends I'm not meat-centric. ;) I general eat it with potato perogies which is a recipe to come. French fries might be a nice kid pleaser.

Leftover Fit-Food




Ok this one may not be that accurate. I went to a Mexican restaurant last night. Part of trying to build a social group means finding people and heading out. The original place I was going to go was a dinner but they were closed. Luckily I saw a Mexican place a short distance away so we walked over.

OMG! I hate to say it but it was better than in TX. Also the portion sizes were not huge! Tasty food. Definitely family owned and operated. I will be back. Maybe today. He said they would have tamales today....

Wait do you see that? I'm closer today! Almost got this. BTW the dinner: homemade fried fish. It's very easy. Crack an egg and scrabble it in milk, dip the thawed fish in it then coat it in flour and fry in hot oil. Then eat! Delicious.

I promise I'll get that recipe I mentioned up. Stuffed acorn squash nom nom nom.

Leftover Fit-Food


This is turning into a series of posts here is why:

You guys keep me honest.

So, I'm starting day three of logging my foods. The picture is from yesterday's logs. Potato chips, grr.... but overall closer than the day before to my food goals, which are? 20% protein, 60% carbs, 20% fat. Yes where they come from is important to. Carbs is mainly from fruits and veggies, protein is lean and fats are omega's and stuff. So instead of the chips, I'm going to add ham to my lunch and that should even out the numbers. :)

This morning my body has started the you-changed-what-you-are-feeding-us routine. (Yes my body is not incorporated into my I thoughts yet, I'm working on that). It means two things to me. 1) Wow I fell off harder than I though I did! 2) This is going to be the hardest day yet.

It is normal at this point. The trick is I'm going to bring more carrots and celery to work today than normal so I can munch on it. The fiber is filling and will help the "stomach of empty" feeling go away. I'm not at food craving stage yet so today will be long but not the worst day of cleaning up my eating habits. Also part of it is I ran a mile yesterday at the gym for the first time since my injury in September! WOOT! So metabolism is bouncing, it will settle soon.

Leftover Fit-Food




So I decided to log my food from yesterday. I use myapex because up till about a year ago I wore a bodybug and I'm used to the interface. I'm playing with the idea of writing my own logging program as there are definite things I dislike about it and about Sparkspeoples' logger.

Anyways it's been almost a year since I last logged it. And the food I picked for this week, if I had stuck to it >blushes< (you caught me) would have been very close to the break down I'm aiming for. It's a bit low on protein. I'm thinking sliced ham instead of toast for my "midnight snack" will fix that problem. If you click on the picture it should take you to a larger readable view.

Leftover Fit-Food

Funny thing about the winter in upstate, it's freakin' cold! Sadly it's been one of the warmest winters on record here, but I've got southern blood at this point and miss my 100deg days >tear<. The result of the cold is the increased difficult of getting out of my warm warm spot in the morning, aka getting out of bed and to the gym. I worked out twice last week. However, the cold also means I don't want to leave my apartment in the evening so I'm cooking more and eating better. Lost a pound last week as a result. So I'm going to keep this up.

Grocery shopping is the game plan for this morning. For those of you who can't read my handwriting the list is:

Milk
Cheerios
Celery
Carrots
Oranges
Bananas
Berries
Spinach
Mushrooms
Feta
Shredded cheese
Sliced cheese
Eggs
Zucchini
A masher
Cream cheese
Deli ham
Sliced bread








Meals as planned are:
Breakfast: milk and cheerios (the one precessed food I have yet to give up) with berries and fresh juice (yay juicer!)
AM snack: zucchini bread and fruit
lunch: celery, carrots, and chickpeas in olive oil and salt (chickpeas are a pantry stable for me) with homemade flat bread
PM snack: oranges and bannas
Dinner: flounder (have some in my freezer) stuffed with spinach, mushrooms, feta and rice
Midnight snack: flat bread and butter

You might be asking yourself why some things are on my list if I don't plan on using them like the cheeses, the ham and the bread. They are there for options. I could replace a dinner with a ham and cheese sandwich or a nut butter (I keep a choice in my pantry) and jelly sandwich. I might want an omelet for dinner or as midnight snack and I like ham and cheese in my omelet.

I've learned that I need to keep a variety of healthy options and some less healthy ones (like peter pan peanut butter and jelly) available to me or else I will go to the store to get even worse items or order in. I'm not adverse to this once in a while; however, I travel frequently especially at this time of year and know that most of my unhealthy foods will be eaten then. So in order to throughly enjoy the holidays and the holiday food guilt free, I'm reducing my naughty foods when I'm in my apartment.

Ok off to the store with me! No more avoiding the outside. I'll update with if this list stays in my $50 a week food budget or not. TTYL!

Total Bill: $72.82
Over by: $22.82

Where did it go?
Most expensive item? Potato Masher for $10.99
Next: Spatula for $6.99
Next: Applegate Sliced Yogurt Cheese for $5.49

Together those items are $23.47

Now two of those are not food items and really should have been bought at goodwill (that is another blog post to come). So I was only over on food by $4.84. How could I have reduced?

I could have bought less expensive cheeses and still bought soy free, hormone free ones. The yogurt cheese is expensive even for Applegate. I could have eliminated the shredded cheese ($4.99) that right there would have done it. Lesson is that cheese is expensive, buy in moderation!

Luckily, for my food budget this month, I'm going to be with family and loved ones for half the month and will not be buying my own food. So a bit over this week is ok especially since I won't be needing to buy cheese next week ;) Oh and I forgot the cream cheese, lol.
