Leftover Food

I've not been purposefully neglecting ya'll, it just sort of happened. I've been traveling. I spent the week of Thanksgiving with Luke sans computer. My new one is still in the shop and computie is not up for travel. I have lots of pictures though so lets see what there is...

From the week before I left, my lunch is now carrots, celery, humus and homemade tortillas (well flavored chickpeas this week, need to get appliance.)


There were Nutella cookie muffins for the T-Day though we ate them all the night before :)












Turkey day snack courtesy of Mis Amy, who made us all an amazing breakfast which I was too busy eating to photograph.



And at the airport on the way out of Austin. Breakfast tacos! These were amazingly good. Perhaps, it's been a while, but these are the classic no frizzles kind that got me hook six years ago. Potato, bean and cheese from Waterloo Icehouse. The lady says they make the same ones at the restaurants. BTW the potato? shredded hash browns just nom nom nom...













Really that's only a taste of what we had. Next time more pictures, a leftover fitness post is bouncing around in my head and I have a recipe to share....

Leftover Thoughts




Running how I have missed you. I didn't always love you so. No it is true, I used to dread you. Now though it's been two months without you, it seems much longer. We met today and flirted you, me and walking. I'll be sore tomorrow, but it was worth it to see you again. I hope that sometime soon you and I can meet without a chaperone.

Leftover Recipe




























Wow so I fell off the edge of everything for the last few days. Last I checked it was 11-8-11 now it's 11-16-11. Woah! I've been busy cooking and have pictures on my camera which only talks to my PC which is in the shop so you'll probably get a bunch a new posts once my PC comes home again. I've made tortilla from scratch!

In the meantime, something I want to make and am afraid of at the same time are brownies in an egg (the picture above is from that link as well). They make me think of all kinds of things like egg drop soup in an egg shell? I have idea how to do it, if I master egg drop soup..... I hope one of you tries these brownies and lets me know how it goes!

Leftover Foods

So... been busy doing nothing specific but I can tell you this, my apartment is clean and I feel as though things are getting done all around.

So what food have been making it into my mouth lately??? Remember food budget?

So I did my grocery shopping Sunday morning as it's my rest day from the gym and I couldn't sleep in. I used to work weekend mornings at a grocery store and it's very zen there in the morning. The shoppers know what they want and are in good moods. If I could still drink coffee I would get a cup and just sit and watch them all morning, but alas no coffee for me, stupid cysts! I spent my budget for food.

B'fast: Cheerios with raspberries
AM Snack: A mix of carbs and fruit
Lunch: Hard boiled egg, homemade pretzel roll, Fage
PM Snack: Fruit

That's the easy bit! I'm a night snacker as was reveled when I was using the Bodybugg. I need variety for dinner, the option for something easy and for something complex. This week I opted for medium. I need to put some work into it, so I feel like I'm cooking but I also want easy. Compromise? Grilled ham and cheese with jam. Yes jam! It's all Luke's fault.

I have learned how to make it without setting off the fire alarm. See the pictorial directions below.

Supplies:


















Step One: butter bread (use hands or side laptop vent to warm and ease spreading)



















Step Two: Warm sides separately on medium heat (when cheese starts to sweat flip it on the bread, warm each side down twice)


















Step Three: Combine sides raise heat to high until desired crispiness reached


















Step Four: Jam one side

Leftover Recipe




So for a variety of reasons, I've decided to attempt to make my own pretzel bread. The recipe I used is from the Food Network

It was fun and interesting to make them. For one, I used whole wheat flour as I didn't have any white in the apartment. Second, I don't actually own measuring spoons... so I wasn't sure until they came out if I would like them or not... Truth is they are way better than the ones from the store and super easy.

Normally making bread from scratch is messy. The pretzel dough wasn't nearly as sticky and so with a big enough bowl, I made no mess.

I will make this a weekly thing!

Leftover Tidbit Update :(


So I said I would let you know how I did on my food budget this week.

In the last 7days I've spent $112.64 on food and groceries. Since I decided to spend $50 a week (which btw was the 1st of Nov), I've spent $85.11. So what did it?

Biggest No? Eating out, which includes buying food on campus. $25.30.

Still without that I'm over for the "goal week" by $9.81. What is that? $14.47 is how much extra I spent because I ate my lunch for the next day after my food was done for the day.

My meals for the week are balanced and meet my nutrient goals. I shouldn't be hungry in the evening. Truthfully most of the time I'm not. I'm just eating because that's what I know to do in the evening.

Lesson: Extra snack costs me money! That's $60 a month, that's a new pair of shoes! Not sticking to the meals I planned to eat and eating dinner out? Costs me money too! About a $100 a month. Those are the five-toed running shoes I want!

Oh and workouts?

MWF: Perfect!
Tuesday: Sick so no work out
Thursday: Half hour of yoga, not the full hour (that stuff is hard >:( think I'll review of the vids I try)
Saturday: Plan is to go to the free yoga at Lulu and try not to buy anything! Well... except maybe a mat...

Leftover Tidbit



I've decided to talk a hint from my friend over at The Chicken Scoop and set some goals for myself. MWF are cardio days. That means I go to the gym and work towards running again. (I busted my ankle up in September couldn't walk for a few days.) TThS Yoga/Workout video. Sunday rest day. I have a food budget of $50 a week. Tomorrow, I'll give you an update on how I did.

Leftover Thoughts


I realized several things about myself and my body in the last few weeks.

1) My body needs vitamin C like woah! I've been tested for vitamin deficiencies before and D and B's come up but not C's. However, by the afternoon, my body starts wanting anything that has it, no matter if I like it or not. So more fruits in the diet. Adding strawberries and pineapple to my breakfast and snacks.

2) It's totally possible to have too many Brussels sprouts especially when one has fluid pushing on their inner ear. Going to be hard to eat my leftovers for the week. Looks like I'm pulling the leftover chili out of the freezer and replacing it with Brussels sprouts and turkey meatballs.

3) I'm low in vitamin K. Again I don't test for a deficiency in it, but all the symptoms are there. My blood wasn't clotting well and I wanted foods high in it. Online says it's hard to be deficient in it, so I'm guessing I'm low in it. So more cabbage and Brussels Sprouts.

4) Vitamin D can not be over rated! I miss my sunny Texas. I've been taking vitamin D pills for the last month or two. My doctor would be so happy. I might be taking more that I need at once, but I'm taking them. I missed one day and the inflammation was such that I had a horrible headache to go with the inner ear problem. Also been crabby lately, actually anti-social, all signs of a deficiency! More milk and dairy will help too!

5) My old, old trainer scares me more than my old trainer though they both rock. My old trainer in TX left the gym I use there so my old, old trainer who now runs the gym will be doing my measurements when I'm in town. The confirmation of which made me put the chocolate down and get my ass out of bed to go to the gym this morning. She's not going to be happy with my numbers and won't take my excuses because she's seen me do better. Gah... time to be good again. Speaking of which time to go back to work...
